These coconut biscuits are similar to those found in Danish biscuit packaging, so crumbly and fragrant. To make them at home, and with the Thermomix, no special ingredients or complicated procedures are needed, coconut biscuits can also be made with the help of the little ones who may have fun covering them in chocolate.
How to make Thermomix coconut biscuits
Put the butter and sugar in the jug and whip for 30 sec., Speed. 5.
First add the coconut flour and then the egg, working for 1 min., Speed. 4.
Finally add vanillin, baking powder and flour and work again for 1 min., Speed. 4.
Leave the dough in the fridge to rest for 1 hour.
Then take the dough, which will still be quite soft, and roll it out between 2 floured sheets of parchment paper.
Obtain the biscuits with a round mold and place them gradually, lifting them carefully, on a baking sheet covered with parchment paper.
Bake for 10-15 minutes or until golden brown in a preheated convection oven at 180 ° C.
