Usually I never change my Cheese Cake recipe with other recipes, because at my house they are crazy about it ... the other week, however, I saw on the forum this version of lemon curd cheese cake posted by Laura and I couldn't resist to the temptation to use lemon curd in my favorite dessert: D
The recipe for this lemon curd cheese cake is by imma51 and is really good as well as very easy to make, I have been very successful;)

Method

How to make lemon curd cheese cake

Chop the biscuits and put them in a bowl together with the melted butter, mix everything with a wooden spoon.

Arrange the biscuits on the bottom of a 20 cm diameter pan (I put it in a 24 cm pan because I like the cheesecake low) lined with baking paper, level as much as possible and place the biscuit base in fridge.

In the meantime, work the Philadelphia and the yoghurt with the sugar, the grated lemon zest and the lemon juice.
Add the eggs to the cheese mixture, one at a time, mixing everything until it forms a smooth and homogeneous mixture.

Line the edges of the hinged pan with parchment paper.
Pour the filling over the biscuit base, bake the cheesecake at 150 ° C and cook for 60 minutes. Remove the cheesecake from the oven and let it cool.

Meanwhile, prepare the lemon curd.
Wash the lemon, grate the zest very finely and put it together with the filtered juice.
In a thick-bottomed saucepan, melt the butter in a bain-marie; aside, mix the egg with the sugar.
As soon as the butter has melted, add the beaten egg in a thread, mixing with a wooden spoon.


Immediately after, add the filtered lemon juice together with the lemon zest and mix.
Add a teaspoon of sifted potato starch and cook the lemon curd in a double boiler for about ten minutes, stirring constantly.
Continue cooking the lemon curd until the cream has started to thicken forming a denser layer.

Let cool and put the lemon curd on the surface of the cheesecake.
Decorate the lemon curd cheesecake with lemon slices and place it in the refrigerator to rest for at least 4 hours.

Serve the lemon curd cheesecake.
