Today I propose the recipe of pasta with mushrooms and bacon, I made a version with tomato and paprika and I loved it.
This first course combines two flavors that I really like: the spicy of the paprika, which contrasts with the sweetness of the bacon, also there are mushrooms ... my favorite ingredient, so ... how not to adore this first course? If you like, you can add a spoonful of cream to make them even more creamy, but be careful not to cover the flavor of the other ingredients.
How to make pasta with mushrooms and pancetta
Clean the mushrooms and cut them into slices
Cook them in a pan with garlic and oil. then lower the heat and add the diced bacon and brown them for a few minutes.
Sprinkle with paprika and leave to flavor for 1 minute. Now add the peeled tomatoes and season with salt, cover and cook for about ten minutes.
Cook the pasta in abundant salted water, drain when al dente and toss in the pan together with the bacon and mushroom sauce.
Then add some grated pecorino, mix and serve
