This potato and green bean salad is one of the summer recipes that I prepare most often because it is a fresh and complete dish that is well suited to this period. While waiting to post the ice cream cake I prepared the other day, I decided to alternate with a light recipe so as not to feel guilty with those on a diet: D
Here I am again, my absence has been postponed to next week, so this morning I will post the recipe for the potato and green bean salad, but today I will try to respond to the messages you left me these days. Kisses to those who pass by.
How to make potato and green bean salad
Put the potatoes in a pot with water and cook with a lid. From boiling, cook for about 30 minutes. Then peel them and cut them into cubes and let them cool.
Trim the green beans and cook them in salted water for about 10 minutes. Then drain them and keep them aside
Meanwhile wash the tomatoes, cut them into chunks and put them in a bowl with the corn and basil. Season with salt, oil and pepper and leave to rest in the fridge.
Once cooled, pour the tomatoes and corn over the bed of potatoes and green beans.
Put the potato and green bean salad in the fridge for at least an hour before bringing it to the table and serving it.
