Meanwhile we make the syrup from water and sugar and orange essence (I put the peel from an orange to the boil to make them more flavorful), we put it to boil until it thickens a little

When they have cooled a little, we put them in syrup for about 1 minute on each side, after which we grease them with honey or milk as I greased them, sprinkle walnuts on top.

Knead a flour dough (250 g), warm water (120 ml) and salt on a plate sprinkled with flour afterwards, cut thin rectangles of dough (1: 1/2 cm) and squeeze them in the middle with two fingers so that the dough should take the shape of the number 8. Let the martyrs dry for at least four hours.

In a larger bowl, boil 2 liters of water, and when the water boils we put the martyrs. Let the heat simmer and simmer for 20 minutes. After that, add salt and sugar, let it boil five or six more times and turn off the heat.

In a bowl, mix the lukewarm water, oil, yeast and vanilla sugar, plus the vial of vanilla essence. Gradually incorporate the flour and, after it begins to thicken, knead by hand. Add as much flour as needed to make a non-sticky and fairly hard dough.

Knead very well, like bread dough, for about 10-15 minutes, then cover with a clean towel and leave to rise in a warm place. Cover the worktop with flour and, after half an hour (when the dough has doubled in volume), divide it into equal pieces.

Once formed, the martyrs are placed in a tray on baking paper and left to rise for another 30 minutes. Boiled Martyrs Recipe

The well-known boiled martyrs are considered a delight among fasting dishes.

How to make boiled martyrs:

1 kg of flour
50 gr yeast
400 ml of milk
300 gr sugar
150 gr butter
2 eggs

Method of preparation


Grease the table with a little oil, take the pieces of dough and shape long and thin rolls.

We join the ends of the roll and weave them in the shape of the number 8.

We put the martyrs raised in the tray.

Then grease them with beaten egg yolk with a little milk.

We put them in the oven until they turn brown.

We make a concentrated syrup from water and sugar. Quickly dip the hot martyrs in syrup and place them on a plate. this operation has the role of keeping them soft and fluffy for a longer time.


For the dough, mix the warm milk with the yeast and a spoonful of sugar (from 200 g). After 5 minutes, add the yolks, soft butter at room temperature, grated orange and / or lemon peel, salt, remaining sugar, vanilla and finally half the flour. Mix with a mixer until it forms into lumps, then gradually add the rest of the flour until you get a soft but compact dough. Leave to rise in a warm place for about an hour.

After the dough has risen enough, divide it into 4 portions. Each portion is divided into 10 (first in 2 and then in 5). Thus we will have a fixed 40 pieces. The dough is processed on the worktop lightly greased with oil.

Grease your palms with a little oil. Each part extends in the form of a long rod, about 50 cm. This wand is folded in 2 and the strips are twisted between them. A braid / twist of about 25-30 cm is obtained here.

From this braid we form optti. the joining of the ends is done right in the middle of the figure 8, below (below the place of crossing).

Place 5 in two large columns in the oven tray. In a tray will fit 10 pieces (12-14 cm long each). 4 trays of martyrs come out.
