Colored pasta salad - ingredients for 4 servings

  • 200g colored pasta
  • 200g sausage Dwarf
  • 150g cherry tomatoes
  • 100g grated grated cheese
  • 50ml Primadonna extra-virgin olive oil
  • 15ml Camara Noastra wine vinegar
  • 50g Grana Padano Lovilio
  • a spoonful of honey Maribel
  • salt pepper

Boil the colored pasta in 2 liters of water (1 liter of water for every 100g of pasta). Add the pasta only when the water boils and let them boil after the time indicated on the package. Rinse them very well under cold running water.

Cut the sausages into slices, cut the cherry tomatoes into quarters. We prepare a dressing of olive oil, vinegar, honey, Grana Padano, salt and pepper to taste.

All we have to do is mix the pasta, sausages, tomatoes and grated cheese with the dressing. Refrigerate the colored pasta salad until ready to serve.


Preparation for the recipe for pasta with ham and mushrooms

The pasta is boiled in water with a little salt, according to the instructions on the package.

In a large pan, heat the 2 tablespoons of oil and sauté the finely chopped onion until translucent, about 5 minutes on medium heat and stirring constantly to avoid burning. Add the crushed garlic and the mushrooms, peeled and cut into slices about 5 mm thick. We will keep them for 8 minutes on medium heat, stirring constantly. During this time they will leave a little water but by the end most of it will have already evaporated.

Serve hot, in shallow plates, resulting in 4 servings, grate cheese on top and sprinkle with finely chopped green onions.

How to prepare pasta with mushrooms, ham and sour cream

In a large pot put boiling water for pasta (with 1 teaspoon of salt). Meanwhile, cut the ham into thin slices and then chop the match. Cut the mushrooms into slices and clean and slice the garlic cloves. Heat 1 tablespoon of olive oil in a larger pan and cook the ham together with the garlic (it should not brown).

Over the hardened ham and garlic, add the mushroom slices and season with salt and pepper. I don't use Italian spices like oregano or basil for this type of pasta & I prefer to feel the taste and aroma of mushrooms and ham. The mushrooms will leave water in the pan and should not be covered just for it to evaporate. Meanwhile, the pasta water comes to a boil and they are also boiled in the big pot. The idea is for the pasta and the sauce to be ready at once. Boil the mixture of mushrooms and ham over low to medium heat for approx. 5 minutes then turn everything off with whipped cream. Let it simmer for another 2-3 minutes and turn off the heat. Sprinkle everything with chopped green parsley and season with salt and pepper if needed.

The cooked pasta (depending on the indications on the package & # 8211 on average between 9-15 minutes) is drained in a sieve. Keep 2-3 drops of water from them. If the mushroom sauce has dropped too much, gradually add 1-2 tablespoons of hot pasta water and mix gently. This stage no longer requires fire. The starch in that water helps the sauce bind. Add the drained pasta to the pan and mix gently with the sauce, so that it does not break.


Necessary ingredients pasta salad with mayonnaise:

  • 250 gr fusilli pasta, penne, macaroni, to choose from
  • 200 gr of ham from Prague
  • 100-150 gr smoked pork breast or 1 smoked chicken leg
  • 1 jar of sour cucumber & # 8211 600-700 gr
  • 4-5 pieces of sour donut
  • 1 small jar of canned mushrooms & # 8211 280 gr
  • 1 can of sweet corn
  • 4 tablespoons mayonnaise
  • 1 lime cream
  • 1 teaspoon classic mustard
  • freshly ground pepper

We take the cucumbers and donuts out of the jars, cut them into cubes and put them in a strainer to drain well. We also cut the bacon ham and the smoked muscle into cubes and put them in a large bowl. Preserved mushrooms, after pressing a little to remove the juice, chop them with a knife, but not too small. We put them in the bowl, next to the ham.

Put a pot of water and a tablespoon of salt on the fire and wait for it to reach boiling temperature. When it starts to boil, put the pasta in hot water for 5-6 minutes, so that we get the pasta al dente. We must keep an eye on pasta and taste them to check when they are ready. Pasta should not be well cooked because it also swells in salads. When the pasta is ready, pour it into a strainer and pass it under a stream of cold water. Generally, pasta used in salads is washed to remove the starch that makes the pasta sticky. This sticky starch can ruin our salad a little. When we make pasta with sauce, it's the other way around, we need starch to help the sauce stick to the pasta.

We put in the bowl with Prague ham and smoked mussels, cucumbers, donut, sweet corn and mushrooms, all drained well. Add the pasta cooled with cold water and drained well. We give a freshly ground pepper powder. Lightly mix all ingredients. Add mayonnaise, cream and mustard, and mix well with a spoon. We leave the salad for 10 minutes after which we can serve it at the table. I am convinced that you will like pasta salad, a very tasty salad and easy to prepare. Regarding the meats used, you can turn, depending on your preference, to other ingredients.

How do you prepare?
