Homemade pasta

Beat eggs well and add flour. Knead until the dough no longer sticks to your hands and is more elastic. It is shaped into a thicker baguette, which is then cut into pieces 1-2 cm thick. Spread with a rolling pin or with a very thin dough spreader on the floured table and then cut into the desired shape.

I spread some of the dough by hand, but then I went and borrowed the noodle machine from my mother and made my work easier. I made noodles, tagliatelle and squares (some cut by hand, others by machine)

Leave it to dry for 1-2 days, preferably on a tablecloth or sheet, then store it in a cardboard box or paper bag.

What do we need for the homemade ketchup recipe?

  • -1O kg fleshy tomatoes, well cooked
  • - 4 kg of red kapia peppers, donuts or red bell peppers, meaty
  • -1 kg onion
  • - 100 ml of vinegar
  • -glices to taste (I put 4 large dogs, I do not want strong taste)
  • -1 link celery leaves
  • -1 link fresh basil (or 1 tablespoon dried)
  • - a few sprigs of thyme and fresh oregano (or 1 teaspoon dry)
  • -2-3 bay leaves
  • -2-3 tablespoons salt (to taste)
  • 150 g sugar
  • ginger root -about 5-6 cm from the root
  • hot peppers 1-2 pieces
  • ground pepper 1-3 tablespoons, depending on how fast you want it to be (1 tablespoon grated - for sweet - 3 tablespoons for hot)
  • ienibahar - 1 tsp
  • coriander - 1 tsp


How to make a homemade ketchup recipe?

Wash the tomatoes, remove the stalk and the green part inside, pass them through the juice machine and put everything to boil.

Bake the peppers, peel them and, together with the peeled onion, pass them through a mincer or robot.

To make sure it comes out as fine as possible, I put in the blender a little, then I poured everything over the juice.

Add the bay leaf and hot pepper, cut in half. Foam and let it boil, stirring periodically, until it reaches the desired consistency.

Now add the fresh, whole greens, garlic, grated ginger, salt, sugar, freshly ground spices and let it boil for another 10 minutes.

If not fresh, add dry. Remove the greens (you can use the robot to make them a fine paste and add them back, or throw them away), adjust the taste with vinegar, pepper, hot pepper, let it boil for a few more minutes (about 5 minutes), then taste again and adjust taste if needed.

I recommend you too eggplant zacusca recipe , it's simple, perfectly balanced, I don't use a lot of salt or oil. It is milder with the gall in this way.

What is smoked ham (ham) called sock or ham? What is bacon or cliché?

We do NOT boil all the ham at once because it weighs over 15 kg. We cut from it pieces of 1 kg (max. 2 kg) which we boil for Easter. We add salted and smoked pieces of boneless meat (raw sliced) but mussels with rind and fat. Here's what boiled ham looks like: it's pink, tender, with a soft, creamy (not rubbery) side.

We always eat it with freshly grated horseradish and homemade pita. This smoked and boiled ham can also be served as a sausage all year round.

If you do not have smoked pork ham from your own production, you will have to look for something similar in trade: raw-dried and smoked ham (it can also be ciolan but NOT preferred!)

Homemade pasta

Sift the flour together with the salt into a large bowl. In another bowl, mix the eggs well with the oil, the yolks and the nutmeg.

Pour the eggs little by little over the flour and mix with your fingertips. Then knead well for 10 minutes. We divide the dough thus formed in two and wrap it in kitchen foil. Leave it in the fridge for at least an hour.

Then we spread it well with a twister and cut it into any shape we want. Or we can use a pasta machine that will make it easier for us to spread and cut pasta.
