Today I tried a fasting cake recipe, I say that because this is the first time I try to make cake. I've always felt like it's hard to do. And besides, most cake recipes are very high in calories… lots of eggs, butter, oil, etc. Does it grow just as beautiful and come out just as fluffy without eggs, butter, milk… the answer is Yes!

It is very easy to make, tasty and fluffy. It is a healthy dessert that we can eat at any time, not only on special occasions, without fear that we will gain a few extra pounds.


  • 500 g flour
  • 250 g almond / soy / coconut milk
  • 70 g sugar
  • corn oil, or which you are used to using
  • vanilla essence
  • a knife tip of turmeric
  • a pinch of salt
  • 35 - 40 g of flour
  • 50 g of milk
  • 25 g fresh yeast, or 10 g dry
  • 10 g sugar
  • 250 g walnut kernels
  • 100 g of locust bean or cocoa powder
  • a teaspoon of coconut oil
  • 100 g raisins
  • 50 g of milk
  • 70 g sugar
  • rum essence


1. First we have to make mayonnaise. Thus, we put the sugar over the yeast and the warm milk on top and mix until the sugar dissolves. Add the flour and mix until a homogeneous paste is formed. We put it in a warm place and let it rise for about 15 minutes.

* A very important aspect when we want to make a dough: all the ingredients must be at room temperature. Less milk that is put over the yeast, which must be lukewarm, not hot.

* You can successfully replace milk with mineral water. It grows just as beautiful and does not influence the result.

2. Until the mayo grows, we can prepare the dough.

Mix the flour with the sugar, turmeric and salt. Add the mayonnaise and start mixing.

* Try not to pour mayonnaise over the place where you put the salt. It is good not to touch it directly because the salt stops the growth process.

Fill with lukewarm milk, add a little vanilla essence and knead for about 10 minutes. Because the dough will be sticky, put a little oil in your hand and continue to knead (I put 3 times). For tenderizing, toss the dough on the counter several times until it becomes fluffy. When ready, the dough should be soft, slightly sticky, but slightly detached from the hand. We soak it and leaven it in a warm place until it doubles in volume, about 1 hour.

* We can play with the dough like this: if it didn't come out hard, we add a little more milk. If it's too soft, add more flour. And if it does not come off easily from the hand, add a little more oil. We knead it and drop it until it becomes fluffy.

3. In the meantime, we can prepare the filling.

We grind the walnut kernel and mix it with the carob powder and sugar. Add coconut oil, rum essence and milk and mix again. You can add more milk, depending on how creamy you want your cream to come out.

4. After the dough has risen, divide it into 2. Give the worktop a little oil and spread the sheets in a rectangular shape. Divide the composition and spread it on each sheet, and put a few raisins on top. If you want, you can put small pieces of shit instead of raisins.

5. Roll the sheets, put them on top of each other in an X shape and weave them.

6. Put the cake in a tray lined with baking paper, cover it and put it up again in a warm place, about 25-30 minutes, until it starts to come out of the tray. Meanwhile, heat the oven to 170 g, with heat up, down + ventilation.

7. After it has risen, put the tray in the oven for 50 minutes: 20 minutes at 170 g, then add 160 g and leave it for about 30 minutes. Watch the cake, if you think it browns too much on top, cover it with baking paper.

8. Mix the sugar with water and put it on the fire for about 10-15 minutes, until the sugar is completely dissolved.

9. When it's ready (we do the toothpick test), we take it out of the tray and out of the paper, we give it with syrup and let it cool, then we serve it with pleasure!

For the dough, form the mayonnaise, mixing vanilla sugar, 100 ml of vegetable milk, 100 g of flour and dry or fresh yeast. Let the mayo rise, then take a large bowl and add the flour, lukewarm milk, salt, orange peel and lemon, powdered sugar, vanilla essence. Mix well and then add the oil and the raised mayonnaise.

Knead the dough until it becomes homogeneous and peels off lightly by hand. If after 30 minutes it is still sticky, add a little more oil. Stop adding flour, because a thick fasting cake will come out, like bread. It is best to add more oil until it comes off your hands.

You can also knead with a large mixer or a food processor. Put the dough in the bowl and grease everything well with oil, then cover with cling film and a clean towel. Leave the bowl in a warm place, away from drafts for at least an hour.


You can play with this filling and add poppy seeds or dried fruit. Depending on the ingredients you have at home, you can make fasting cake with raisins, poppy seeds, vanilla cream or pudding.

For the filling with nuts and cocoa, you have to grind the nuts in a blender. Add the sugar and cocoa to a pan with the walnuts and mix well. Then add a little milk and let it boil until everything becomes a cream. You can taste and add vanilla or sugar essence, according to taste.

After the dough has risen, divide it into two equal pieces. Each piece is spread on the worktop greased with a little oil. Stretch it wide enough, but not too thin. Then take the cream and grease each piece of dough well to the edges.

You turn it into a roll and catch the edges well. Do the same with the other piece of dough. Now, if you want, you can bake them in separate trays and get two cakes, or you can knit the two rolls and make one big cake. Whatever you decide, put the cake in the pan and cover with a clean towel. Leave to rise for at least 30-40 minutes.

Once they have risen, place them in a tray lined with baking sheet or with oil and flour. Grease them well with a milk brush, then sprinkle with brown sugar and almond flakes.

Put it in the oven at 170 degrees in the preheated oven. Remove the fasting cake from the oven and let it cool in the pan, then remove it.

The raised dough is spread in two 1 cm thick sheets, which are greased with poppy seeds, rolled and knitted. Place in a pan greased with butter and leave to rise again for half an hour. Grease the cake with egg and bake in a hot oven for 35-40 minutes.

From these ingredients come two large cakes. The bread machine used has a capacity of 1 kilogram. Do not double the quantities! If you want 4 cakes, resume the process.

The bread machine starts the pizza counter program, which is resumed after the kneading stage is over, so that the dough is as fluffy as possible. Leave the dough to rise for about 15 minutes at the leavening stage.

Ingredients for the composition:

  • 4-5 tablespoons sugar

Mix the dry ingredients, then add the egg whites. When the dough is ready, the composition is incorporated into one half of the dough, after which it is combined in the other half, thus taking the form of a cake. Place the composition in a cake pan greased with a little butter or oil and leave to rise for another 10-15 minutes. Before putting the cozonacs in the oven, grease them with egg yolk and garnish with walnuts or sugar. Leave in the oven over medium heat for about 35-40 minutes.
